Born in Pittsburgh, The Hungry Cowgirl reimagines 90s Tex-Mex with a fresh, modern approach. We keep the bold flavors but elevate the ingredients.

Our culinary director, Chef Paco Robert, brings precision from his years as sous chef at Chicago's three-Michelin-starred Alinea. Now he creates food meant to be devoured, not just admired.

The spirit of The Hungry Cowgirl draws inspiration from founder Eric Meyhofer's wife. Having grown up in Arizona, both Eric and his wife share a deep connection to Tex-Mex cuisine—making it the natural first choice to test with their assembly technology. Their southwestern roots and genuine love for flavor-forward food guides everything we do.

By day, Eric leads Lab37, pioneering robotics that revolutionize food assembly. By night, this technology transforms into culinary innovation where technical excellence meets soulful cooking.
